Shane Pollak started in the restaurant business when he was old enough to work. In 1990 he took a job with Sarasota Brewing Company, worked his way through the ranks and eventually became the restaurant’s kitchen manager. Shane designed the entire menu for the brewing company and from that, won the best appetizer award for his Mako Shark Bites in Citrus Beer Marinade from Sarasota Magazine’s “Best of the Best”. In 1995 he left to share his talents with one of the premier fine dining restaurants on the west coast of Florida. During his time there, he catered numerous off-site functions for crowds numbering from six to six hundred. He also worked directly under many guest chefs including some from the Four Seasons Hotels in New York, Philadelphia and Chicago. In 1999, Shane came to helpMorton’s Gourmet Market, which specializes in catering and take-home gourmet meals to-go. Shane has been an integral part of putting this home meal replacement program together. These dishes include Lobster Ravioli with Shrimp Sauce, Roast Half Duck with Pecan Sauce, and Braised Lamb Shank with Mashed Rutabagas just to name a few. All of these meals are freshly made and put into individual portions for easy carry out. Shane participates in many charitable events thoughout the year.
